With reforge you're prestiging your weapons. Meaning, you know that stupid beaver who jumps around and slams his tail? You'll be fighting 4 different variations of that, all with slightly different move sets, but similar enough that you will definitely notice the patterns and "learn" how each behemoth moves. You'll realize that most of the behemoths are reskins/different elemental types of their brethren. The higher leveled fights tend to last longer/give more personal experience in fighting that behemoth type. Low level behemoths die especially quickly, even if it's just you fighting it. Even then there is a "danger" mechanic that prevents that from happening. If you're looking for those long 20-30 min battles of Monster Hunter, unfortunately NONE of the behemoths really put up that kind of fight.
